Se bat albusurile spuma, apoi se adauga cateva linguri de zahar, batand in continuare pana cand compozitia se intareste si sta pe tel chiar si atunci cand este ridicat. Intr-un castron se bat galbenusurile cu zaharul ramas si cu faina pana in momentul in care se obtine o compozitie omogena, cremoasa, de culoare alba. Concomitent, se pune laptele la fiert, intr-o craticioara, adaugandu-se si zaharul vanilat.<\/p>\n<p>Cand laptele incepe sa fiarba, se da focul mai mic si, folosind o lingura, se formeaza bulgari de albus care se introduc in laptele fierbinte. Din cand in cand se intorc bulgarii de pe o parte pe cealalta, pana cand se intaresc, dupa care se scot intr-o strecuratoare.<\/p>\n<p>Dupa ce se foloseste tot albusul pentru format bulgari, care apoi se fierb in laptele fierbinte, se strecoara laptele, se adauga si crema formata din galbenusuri, se amesteca bine, apoi se pune compozitia rezultata pe foc mic, amestecandu-se in continuu, pana cand capata consistenta, dupa care se lasa la racit.<\/p>\n<p>Laptele de pasare se serveste rece, cu bulgarii de albus \u201cplutind\u201d prin el ca niste barcute!
